Oven-Baked Barra with Bok Choy

Darwin Fish Market BarramundiIngredients: (Serves 4) 4 x 150g portion of barramundi fillets (skinned) 1/4 cup hoisin sauce 1/4 cup sweet chilli sauce 1/4 cup lime juice 1 bunch baby bok choy, trimmed and quartered lime wedges to serve

Preparation: Preheat the oven to 200ºC. Combine the hoisin sauce, sweet chilli sauce and lime juice. Divide the bok choy between four sheets of baking paper. Top each with a fish fillet and some of the hoisin sauce mixture. Fold up the paper to enclose the fish. Place the parcels on a baking tray and bake for 5-8 minutes or until the fish is cooked through.

Serving
Open the parcel and serve with lime wedges.
